I love a warm dish during the cold winter, something that makes us feel warm and cosy and better if it is full of nutrients and flavours.
I cook as I learn from the Spanish tradition of cooking lentils with chorizo but to be fair mine are a bit different probably, adding the ingredients that fit my likes. Here is the beauty of cooking, you could add anything that you like.
If you continue reading I will explain how I cook this warm dish full of fibre, Iron, and energy that we need to beat the cold.
In this case I used the following ingredients:

- 3 cloves of garlic
- 3/4 of an Onion
- 3 small carrots
- 2 Bay leaves
- 50 g of paprika
- 300g of dry lentils
- 150g of chorizo
- 1 cayenne pepper
- 20g of olive oil
It is very easy, you only need a pan and some patience. Add the lentils, chorizo, onion, tomato, carrots, paprika, garlic, bay leaves, cayenne pepper (break it if you like a spicy kick) and olive oil in to a pan with enough water to cover the ingredients and simmer it in low heat to avoid braking down the lentils. (Do not stir it and do not chop the onion, tomato and garlic. Only chop the carrots in to squares or slices as you want to find them later).
Once all together has been cooking around 1 h, take out the garlic, tomato and onion. Blend it and add this blend in to the pan again. Then cook during further 30-45 minutes until your lentils have a nice texture.
This is the easy way to cook lentils. Some people chop all the vegetables and fry them and then add the rest of ingredients but I encourage you to try the lazy way that tastes so nice and pure.
Both will have an amazing taste because being a simple recipe of ingredients that match so well you will have an amazing plate to nourish your family in a tasty and cheap way.

I know I have used Chorizo on this recipe and maybe you want to make this plate vegetarian. It would be so easy, just leave out the chorizo. To replicate the chorizo flavour add an extra spoon of paprika and an extra garlic clove. It will not be exactly the same but it will taste very similar.
I choose this plate in my imperfect diet and I believe if you try it you will add it to your weekly diet.
Did you know that it is recommended to eat 2 portions of legumes per week? Did you know that adding rice to legumes will create a similar protein value as animal origin protein? Did you know that drinking an orange juice after eating lentils will increase the absorption of iron that are naturally in the lentils?
